If I spring for the Idlewild South Super Deluxe Edition in 5.1 surround sound will I hear anything different or better on my 2 channel conventional stereo?

Not "better" - It might come out of the speakers slightly different balance, I have found 5:1 plays thru 2 channels fine, may require tone tweaks to your preference, but so does 2 channel. Happens all the time with 5:1 only DVDs thru my stereo, no big difference.
