The bottles that the liquor store has refrigerated already, if I store them unrefrigerated will they continue to evolve, or, did chilling them stop the aging process?

Yesterday, in a midwest chain grocery store, found ~ 2 1/2 cases of it. A case of this bigger bottles being maybe 12 bottles (didn't check the quantity of that).

Christmas Jam was just ok. TTB was pretty good, fantastic musicianship for sure, but Susan was wayyyy over the top with her take on "With a Little Help From My Friends" as with most of the other material. She just can't front a band that is that good. Just my take on it. I miss the dTb badly.
I really didn't care much for the Ashes and Dust thing. And the Soulshine was just horrible. Worst Soulshine I have ever heard. Why can't Warren give that fucking song a rest?
Dawes was just ok. Duane Betts on lead guitar.
I just don't really get Blackberry Smoke. Good musicians, great energy, but average material, again, just my opinion.
Hot Tuna was great. Jack was jumping around like a 20 year old 😛 . But, they were very early on in the lineup and the rest of the evening I just kinda waited on something to happen.
Doobies suck just like Skynyrd, just mailing it in and playing a greatest hits set. They oughta hang it up.
If Bonamassa had played, it would have probably made a difference.
