Since I am of Italian heritage, my fondest Easter food memories are of pizza rustica or Torta di Pasqua and Ricotta pie with chocolate chips. I have to have these 2 dishes, or its isnt Easter foodwise for me.

I used to run an Italian deli, and yes, Pizza Rustica is amazing! Basket cheese also was a big seller.

Being Polish, our tradition is homemade Polish sausage and pierogis in the morning before Church. That's our "big meal"
We usually do a big ham on Saturday and have leftovers on Easter Sunday in the afternoon/evening. There are few things in this world as wonderful as a real ham sandwich with cheese, lettuce and mayo.

We always smoke a big ham (if fact doing that tonight in the pit), potato salad that takes two days to make! , green beans or green bean casserole, sweet potato pie, sweet tea, and cornbread with homemade butter. Hmm. We use pecan wood to give it a wonderful taste and it cooks hotter. Y'all come now ya heah

Would LOVE the recipes!!! My grandmother used to make a ricotta pie but took the recipe with her if you catch my drift...she also used to make some sort of cheese and meat pie witth pepperoni, etc., that recipe too was not left behind...

Among other things, I always cook a spiral ham and pineapple stuffing - can't have a holiday without it. Being Italian I usually have a pasta course like manicotti. My mom makes scalloped potatoes, we have string beans, corn, applesauce, rolls and salad last.

Will be making the requisite Easter Bunny cake with the kids tomorrow morning and Pizzelles, my grandmother's secret recipe...

mmmmm getting hungry!
